Salmon is the fish that has had a phenomenal career in our homes the last few years – most people now eat salmon at least once a week. It is nourishing, full of omega-3, easy to prepare and very good value. But a lot of people feel a bit uncertain when it comes to preparing fish dishes and thinking up new exciting salmon recipes.
Salmon fish presents about seventy easy-to-prepare recipes for starters, snacks, salads, pies and hot dishes with fresh, smoked or gravad salmon as the main ingredient. This is both a basic cookery book about how to prepare salmon, and a book of inspiration for home cooks who want to renew their repertoire. The book is filled with delicious recipes, from simple traditional salmon pudding and boiled salmon with Hollandaise sauce, to more imaginative and exotic dishes such as salmon ceviche or salmon casserole with curry. The book also explains how salmon can be prepared: raw spiced, salted, smoked and poached cold.
Paula and Susanne jointly made the book Drömmen om ett orangeri [The dream of an orangery] (Infobooks 2007). This has received a great deal of attention in interiors and garden magazines. The Swedish Meal Academy honoured it with the first prize in the Best Kitchen Garden Book category in 2008.
Susanne Hallmann has previously been involved in many book projects both in development and as a photographer. In 2006 and 2008, she received one-year grants from the Swedish Authors’ Fund.
Paula ran a boutique selling antiques and interior furnishings for 21 years. Her home has been photographed by Swedish, Norwegian and French antique and furnishing magazines. Paula has also worked as a food stylist and created innumerable recipes for cookery books.
